I might be doing Easter with a bunch of meat-LOVING people.

I’m just going to bring my own dish, so they don’t have to worry about feeding me…and I don’t have to worry about what they put in their dish.
But I want to try to prepare ahead of time so I can make something super awesome.

People of Tumblr, what’s a dish that’s Easter-y/Spring-y that I could bring to show off how AWESOME vegan food is?

Hey all.

Name’s Chelsea, but some friends call me Chela, so I use it sometimes.

I’ve been feeling petty “bleh” lately in terms of my physical health.
Last year around this time, I was kicking SO much ass with my health.
And then it just kinda went downhill quickly last semester when I let bad people from my past interfere with my present happiness.

BUT NOW, for the most part, I’M MENTALLY HEALTHY AGAIN!  It was a difficult journey to get there, but with help from a professional and some incredible friends, I managed to find my way out of the awful forest and into the shining city.
And it feels good to be back to a good place in that part of my life.

Now I want my physical health to reflect that, though.

I’m not the most motivated person when it come to this, so it’s going to be just as difficult as it was to improve my mental health, but I need to at least try so I can have energy again. 

A few notes and a kind of plan:
I drink at least once a week, socially.  Maybe not the healthiest consistent thing in my life, but it brought me something to look forward to every week, as well as gave me a balance to make sure I was getting people (outside of my choir) in my life.  So I refuse to get rid of that.  It just means I have to work a bit harder the rest of the week to balance that part.
I’m vegan, which pretty much automatically means I eat more carbs on a daily basis than is really acceptable.  But I try to balance it with as many vegetables and raw fruit as I can.
I need to cut out pop as much as I can.  I’m addicted.  It’s worse than the alcohol.  I drink diet, but it makes me feel gross after I drink so much.  But it is an addiction.  Any tips on how to fix this are welcome.

I’m sure I’ll think of  more.

On this blog, I want to kind of keep track of what I eat (yes, I do have a food blog for that, but that’s more to share especially delicious things I consume) and my “activity.”  I think by doing this, I’ll be more motivated to actually DO activity, but also to eat healthier if I know it’s having a record somewhere or if people are reading it.

NEW BLOG I’M GOING TO TRY TO RUN TO HELP GET MY PHYSICAL HEALTH BACK IN ORDER.

Don’t feel obligated to follow, but it’s a thing I’m doing, so I thought I’d share with y’all.

I feel like people come into our lives when we need them to the most.  Not because there’s some kind of Grand Plan in the world, but because that’s when we’re the most willing to let them in.  Like, we have a weird “basic needs” way to sense who it is we need to help us through a Life Jam.

Or maybe I’ve just been really lucky the past year or so with who I have let in and out of my life and the timing of both.

First of all,
WELCOME! :D

I just wanted to offer my ask box or whatever if you need any help or advice as you start your adventure at Eastern.
Yes, people are paid to help you, but I know how I am, and asking people questions in person when they can see who I am can feel crazy scary.  (Don’t be scared, though.  I know some of the people, and they’re almost unbearably nice.)  So I thought I’d open my box for you to ask questions anonymously. 

It’s my fourth year here, so I’ve had a fair number of classes and might be able to give a pointer for an instructor or class.
Or just give you pointers on where to eat on campus.  (Also fourth year living on campus.  I’m vegan and have been vegetarian my whole time here, but food is food, and I eat a lot of it.)
Or just to cheer you on.  (First semester can be tough for some.)
Or just to be a friendly face, if that’s what you need.

Believe me, I’ve already heard pretty much all the basic questions from my younger sister, who just moved in yesterday, so don’t hesitate.

I am throwing around the idea of becoming a vegetarian. I am really not a big meat eater to begin with so it would be pretty simple. Does anyone out there have tips?

Depends on what kind of tips you’re looking for.
I eased into being vegetarian (and later vegan) accidentally, and that worked well for me.  (I also have the “dedicate to something and go for it” kind of mentality when it comes to my morals, so that helped.)  Giving up meat requires a kind of “detoxing” process, so you just have to work through it or ease out of it, depending on your body.

One thing to remember is the average person doesn’t really need as much protein as society makes us think, so don’t worry about that too much.  Obviously, still put forth an effort, but don’t let that scare you away from at least trying vegetarian.  (I, personally, had more trouble with iron, but I also was diagnosed with a thyroid disease at the same time.  They kind of play off of each other.)
Black beans are easy to manipulate to replicate the taste/idea of meat, I think.  It’s not exact, but they taste delicious.
Careful of replacing meals with sugar and carbs just because they’re easy and there.
Frozen boxed meat is a good “treat,” but don’t rely solely on those either.  If you want “meat,” black bean burgers are super easy and cheap to make at home… and probably healthier.  (Even my picky omnivore family and friends like them!)

I can’t think of many more off the top of my head at the moment, because I’m a little tired, but I wrote this post on my food blog a bit back… and some people added to it.  Some good ideas have been shared.

Basically,
just go for it.
Follow some food blogs if you need food ideas.  (Obviously, not necessarily mine, as I kind of suck at updating it with new ideas and it’s usually just awful pictures, but there are some awesome ones out there.)
Do a little research.
And congrats on at least considering it.  Important step. :)
